Heat a large skillet or wok over medium-high heat.
Melt butter in pan.
Finely chop the onion and mince the garlic, then add to pan.
Sauté until the onion is translucent and the garlic is fragrant, about 2-3 minutes.
Add the ground beef and season well with salt & pepper.
Cook the beef, breaking it apart with a spatula, until it is fully browned. Once cooked, remove the contents from the skillet and set it aside.
Add the package of Trader Joe's Vegetable Fried Rice to the skillet. Stir and cook according to the package instructions, usually about 5-7 minutes.
Beat your eggs in a small bowl.
Push the rice mixture to one side of the skillet. Pour the beaten eggs into the other side and scramble them until fully cooked, then mix them into the rice.
Add the beef back in and stir to combine with the rice and egg mixture
Add the soy sauce and Japanese barbecue sauce to the skillet. Stir everything together and cook for an additional 2-3 minutes to let the flavors meld.
Taste and adjust seasoning if necessary. Remove from heat and serve hot.
